Hot Water Conditioning: We utilize hot water treatments to effectively reduce potential microbial hazards. Research has demonstrated that treating in-shell pecans with hot water at specific temperatures and durations can achieve significant reductions in bacteria, ensuring the safety and quality of the nuts. 

Moisture Control: Post-shelling, pecan meats naturally contain between 7% to 9% moisture. To enhance shelf life and prevent spoilage, we reduce this moisture content to 4% or lower by circulating dry air through the pecan meats.
